Tuna casserole is one of my vegetarian sorrows. They used to make a nice tofuna, and that worked, but now there is nothing. I guess I will have to stick wit macaroni and cheese.
This particular dish would be great just filled with roasted veggies and topped with goat cheese. If you don't like brown rice or eggs you are out of luck.
